Sign up for Pine Cone Research


I wrote about Pine Cone Research a while back, and I got an email from them yesterday saying they are looking for more surveyers! If you sign up soon, you may be able to take surveys and get paid $3 for each one you do! I haven't gotten as many as I thought I would, but I'm assuming that is because I don't work. I may be wrong though. They asked a lot of questions in the beginning about how much influence I have on a company on what products they buy. Anyway, go here to sign up! They probably won't be doing this for long, so go soon. You don't have to give much information, and they send you checks, so you don't have to give them your banking info either. Only ONE person per household can do this. Please don't sign up more than one because they will eliminate you from the panel. It's free money for easy surveys!

Parmesan Crusted Chicken


I got this recipe from The Pioneer Woman. It's called Kay's Parmesan Crusted Chicken. (I realize this picture makes the chicken look dry and crusty, but it was actually the most tender chicken I've ever cooked. The topping wasn't crusty at all.) I love her website! She takes pictures (high quality) while she cooks and everything is really good! Here is the recipe:

Ingredients:
1/2 cup Mayonnaise
1/4 cup grated Parmesan cheese
4 chicken fillets (or boneless, skinless chicken breasts)
2 sun-dried tomatoes, jarred
1 tsp Italian herbs
1 tsp basil
cayenne pepper

Crumbs:
2 tbsp breadcrumbs
Garlic salt
1 tbsp Parmesan
1 tsp oregano

Directions:
Preheat your oven to 425 degrees F.

Place 1/2 cup of mayonnaise in a medium sized bowl. Add 1/4 cup of grated Parmesan cheese to the mayonnaise. Next, add a good pinch of cayenne to spice things up a little. You can add regular pepper if you don't care for cayenne. Next, add 1 tsp. frozen or dried Italian herbs or your favorite Italian seasoning and 1 tsp. dried or frozen basil. Finely mince two oil-packed sun-dried tomatoes and add it to the Mayonnaise mixture. Stir until combined.

Now grab another bowl and measure 2 tbsp breadcrumbs, combine that with 1 tbsp Parmesan, 1 tsp dried oregano, and a generous amount of garlic salt. You can also use a little garlic powder with regular salt, of course.

Place 4 chicken breasts in an oven proof dish and spread the Mayonnaise mixture over top generously. Next, cover them with the breadcrumb mixture. Place in a pre-heated oven and bake for 20 to 25 minutes or until cooked through. (Longer cook times will be required for thicker pieces of chicken. Flattening thicker pieces of chicken with a tenderizer beforehand will help reduce over-all cook time.)

I paid $0.73 on a giftcard that I got for free a month ago, and got back $3 in Register Rewards. Not too bad for a newspaper, toothpaste, and shaving cream!

I am not going to need to buy mascara or eye liner for at least six months, maybe a YEAR! I didn't think the CVS ad this week was that great, but I did really good! I got $171.33 worth of products (or $96.33 if you don't count the glucose monitor) for $2.51 on a CVS giftcard which was FREE to begin with!!! Here is what I did:

This was all I was planning on doing, but then I got a $10/$50 coupon and was determined to find a way to spend it to get $50 free stuff! So that's what transaction #2 is.

I still have $19.49 in ECBs (What I got for this transaction)!

Slow-Cooked Pepper Steak


This is one of my favorite recipes!! I only make it when I can get the round steak on sale (which hasn't been very often).

Slow-Cooked Pepper Steak
(Fix-It and Forget-It Cookbook)

Ingredients
1 1/2 - 2 lbs. beef round steak, cut in 3" x 1" strips (buy it tenderized if they have it)
2 Tbsp oil
1/4 cup soy sauce
1 garlic clove, minced
1 cup chopped onions
1 tsp sugar
1/2 tsp salt
1/4 tsp pepper
1/4 tsp ground ginger
2 large green peppers, cut in strips
4 tomatoes cut into eighths, or 16-oz can diced tomatoes
1/2 cup cold water
1 Tbsp cornstarch
Rice or noodles (I make fried rice)

Directions
1. Brown beef in oil in saucepan. Transfer to slow cooker.


(I usually use more beef, but this was the only package left at Albertson's - 1.4 lb.)

2. Combine soy sauce, garlic, onions, sugar, salt, pepper, and ginger. Pour over meat.


3. Cover. Cook on Low 5-6 hours.
4. Add green peppers and tomatoes. Cook 1 hour longer.


5. Combine water and cornstarch to make paste. Stir into slow cooker. Cook on High until thickened, about 10 minutes.
6. Serve over rice or noodles. I usually put 2 1/2 to 3 cups rice in my rice maker. (We like lots of rice.)

Quick Carbonara


Quick Carbonara
Southern Living's Easy Weeknight Favorites
4 servings

1 (8 oz) package spaghetti, uncooked
8 slices of bacon
2/3 cup chopped green onions
1 (4 oz) can sliced mushrooms, drained
3 egg yolks, lightly beaten
1 to 1/2 cups (4 to 6 oz) finely shredded Cheddar cheese
Dash of pepper

Cook pasta according to package directions. Meanwhile, cook bacon in a large skillet until crisp; remove bacon, reserving 3 tablespoons drippings in skillet (to make this healthier, you can do half drippings half olive oil). Coarsely crumble bacon, and set aside.

Cook green onions and mushrooms in drippings in skillet over medium heat for 2 minutes. Drain pasta, and place in a serving bowl. Stir egg yolks into hot pasta immediately after draining it. Stir in bacon, green onion/mushroom mixture, cheese, and pepper; toss. Serve immediately.

Grandma's Rice Dish

Another really good recipe from the Dean's! 3 for 3! :o) Honestly, I was nervous about this one when I was making it, but it was delicious! I don't have a final picture for you this time though because I was impatient, grabbed a towel instead of an oven mit, and didn't have a good grip on the pan when I was bringing it out of the oven... and dropped it... losing 1/3 of it onto the bottom of the oven. I'll post a picture when I make it again. Brett told me to say that will be soon! Anyway, here's the recipe:

Grandma's Rice Dish
6-8 servings

1 lb ground beef
1 small onion, chopped
1/2 cup chopped green pepper
2 cup cooked long grain rice
1 can (14 1/2 oz) diced tomatoes, undrained
1 can (11 oz) whole kernel corn, drained
1 can (2 1/4 oz) sliced ripe olives, drained
6 bacon strips, cooked and crumbled
2 tsp chili powder
1 tsp garlic powder
1 tsp salt
1 1/2 cups (6 oz) shredded cheddar cheese, divided
1/2 cup dry bread crumbs
1 tbsp butter, melted

In a skillet, cook beef, onion, and green pepper over medium heat until meat is no longer pink; drain. Stir in the rice, tomatoes, corn, olives, bacon, chili powder, garlic powder, and salt. Bring to a boil; remove from the heat. Add 1 cup cheese and stir until cheese is melted. Transfer to a greased 11in x 7in x 2in baking dish.


Toss bread crumbs with butter; sprinkle over cheese. Bake, uncovered, at 350 degrees for 15-20 minutes or until cheese is melted.

Chicken Biscuit Bake


This is one of Brett's favorite meals. Another yummy Recipe from Sallie and Caleb Dean. In these pictures, I halved the recipe. Enjoy!

Chicken Biscuit Bake
6-8 servings

1 can (10 3/4 oz) condensed cream of chicken soup, undiluted
2/3 cup mayonnaise
2 tsp Worcestershire sauce
4 cups cubed cooked chicken
3 cups chopped broccoli, cooked
1 medium onion, chopped
1 cup (4 oz) shredded cheddar cheese
2 tubes (12 oz ea.) refrigerated buttermilk biscuits (I buy Pillsbury Grands Jrs and use all but two biscuits.)
2 eggs
1/2 cup sour cream
1 tsp celery seed
1 tsp salt

In a bowl, combine the soup, mayonnaise, and Worcestershire sauce. Stir in the chicken, broccoli, and onion. Transfer to a greased 13in x 9in x 2in baking dish. (Remember, I halved the above recipe, so I used an 8x8 pan instead of a 9x13in pan.)


Sprinkle with cheese. Cover and bake at 375 degrees for 20 minutes.

Separate biscuits; cut each in half. Arrange, cut side down, over hot chicken mixture.


In a bowl, combine remaining ingredients (eggs, sour cream, celery seed, and salt) and pour over biscuits.


Bake, uncovered, 20 minutes longer or until golden brown.

Chicken Mole Enchilada Casserole


I've never wanted to put pictures of food that I've cooked on this website since my camera doesn't give the best photos like ever other blog out there, but I usually don't try recipes that don't have a picture. I really want you to make this recipe, so I'm putting a picture up and hoping you'll try it!

I don't really know what this is called, but we just decided to call it Chicken Mole Enchilada Casserole. We got this from our friends, Sallie and Caleb Dean. I think it was in a Paula Deen chocolate magazine. It's delicious. Yes, ok, it's not the healthiest thing ever, I mean seriously, it's a Paula Deen recipe, but please try it! I would assume it serves about 8-10 people. Next time we are definitely going to half it unless we have people over.

Chicken Mole Enchilada Casserole

1/4 c. butter
1 onion, minced (or just frozen ones)
1 green bell pepper, minced
3 cloves garlic, minced
2 (8 oz) packages cream cheese, softened
1 (16 oz) container sour cream
3 c. chopped cooked chicken (or canned)
2 c. shredded Monterey Jack cheese, divided
2 c. shredded sharp Cheddar cheese, divided
2 Tbsp minced fresh cilantro
1 tsp ground cumin
20 corn torillas (small ones)
Mole Sauce (recipe at bottom)

-Preheat oven to 350 degrees, and lightly grease a 9 x 13 in. pan.
-In small skillet, melt butter over medium heat. Add onion, pepper, and garlic; cook, stirring frequently, until vegetables are tender. Set aside.
-In large bowl, combine cream cheese and sour cream, stirring until smooth. Add chicken, 1-1/2 cups Monterey Jack, 1-1/2 cups Cheddar, cilantro, cumin, and onion mixture. Stir to combine.
-In a large skillet, make mole sauce (recipe at bottom).
-Tear tortillas into bite-size pieces. Place half of tortillas evenly in bottom of prepared dish.

-Spoon half of chicken mixture over tortillas.

-Top evenly with half of Mole Sauce.

-Repeat layers once, ending with sauce.
-Bake for 30-40 mins or until hot and bubbly.
-Sprinkle evenly with remaining cheese. Bake for 5 mins more, or until cheese melts.

Mole sauce
2 Tbsp butter
1/3 c. minced onion
2 cloves garlic, minced
2 tsp ancho chili powder
1/2 tsp ground cumin
1/2 tsp ground black pepper
1/4 tsp dried oregano
1/4 tsp salt
2 (15 oz) cans tomato sauce
1 (1 oz) square unsweetened chocolate
2 Tbsp firmly packed brown sugar

-In large skillet, melt butter over medium heat. Add onion and garlic; cook for 3 to 4 mins, or until tender. Stir in chili powder, cumin, pepper, oregano, and salt; cook, stirring frequently for 2 mins. Stir in tomato sauce; cook, stirring frequently for 10 mins. Add chocolate and brown sugar, stirring until chocolate is melted and mixture is smooth.

Pine Cone Research


So, if you read other blogs, you may have heard of Pine Cone Research. Pine Cone Research is an online research company that pays people (like you and me) to take surveys. I usually get one every day or two, and they pay me $3 per survey. In other words, I'm probably going to get anywhere between $45-$90 this month for taking 15 minute surveys on household/kitchen products! Not too bad when I'm looking for study breaks. :o) I don't know if they are still taking more people into their panel, but you should check it out. Calzone Rolls

Taste of Home magazine
2 dozen

1 2/3 cups warm water
2 tablespoons nonfat dry milk powder
2 tablespoons sugar
2 tablespoons shortening
1 1/4 teaspoons salt
4 1/2 cups flour
2 1/4 teaspoons active dry yeast
1/2 cup chopped onion
1/2 cup sliced fresh mushrooms
1/2 cup chopped green bell pepper
1/2 cup chopped sweet red bell pepper
1 tablespoon olive oil
1/3 cup pizza sauce
1/2 cup diced pepperoni
1 cup (4 ounces) shredded pizza cheese blend
1/4 cup chopped ripe olives
2 tablespoons fresh grated parmesan cheese

In bread machine pan, place the first seven ingredients in order suggested by manufacturer. Select dough setting. Saute the onion, mushrooms and peppers in oil until tender; cool. When bread machine cycle is completed, turn dough onto a lightly floured surface; divide in half. Let rest for 5 minutes. Roll each portion into a 16 inch x 10 inch rectangle; spread with pizza sauce. Top with the onion mixture, pepperoni, pizza cheese and olives. Roll up each rectangle jelly-roll style, starting with a long side; pinch seam to seal. Cut each into 12 slices. Slicing tip - I use dental floss to cut the rolls, instead of a knife which tends to “squish” the dough. Slip the floss under the dough, cross in the middle, pull and slice. Place slices cut side down in two greased 9 inch round baking pans. Sprinkle with parmesan cheese. Cover and let rise until doubled, about 30 minutes. Upside down pineapple = super sweet!

It works! I left my pineapple upside down while I was waiting for it to turn from green to yellow. It is the SWEETEST pineapple I've ever had! I didn't even know they could get so sweet! Make sure you try this next time you buy a pineapple.
